# Step-by-Step:

01 - Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine cheddar, Monterey Jack, black beans, bell pepper, green onion, cumin, chili powder, smoked paprika, salt, and pepper. Mix well.
03 - Cut each tortilla in half to create 32 semicircles.
04 - Place a tablespoon of the cheese mixture on each semicircle. Fold the straight edge over the filling to form a triangle, pressing gently to seal.
05 - Arrange the quesadilla triangles, points facing inward and slightly overlapping, in a tight ring on the baking sheet to form a blooming flower shape.
06 - Brush the tops with melted butter.
07 - Bake for 18-20 minutes, or until tortillas are golden and cheese is melted.
08 - Slide onto a serving platter. Sprinkle with fresh cilantro. Place salsa, sour cream, and avocado slices (if using) in small bowls in the center of the ring for dipping. Serve with lime wedges.

# Expert Suggestions:

01 -
  • The way everyone gathers around the table, pulling apart warm, cheesy triangles feels like an instant party starter
  • You can assemble the whole thing hours ahead and bake it when guests arrive, which is my favorite kind of hosting trick
02 -
  • The overlapping arrangement is what keeps the ring shape. If you leave gaps between triangles, it will pull apart during baking
  • Let it rest for exactly 3 minutes after baking. Any longer and they lose their crisp, any sooner and the cheese is too molten to cut cleanly
03 -
  • Grate your own cheese instead of buying pre-shredded. The anti-caking coating in bagged cheese prevents that perfect melty texture
  • After brushing with butter, sprinkle everything with a tiny pinch of kosher salt. That final crunch on top makes a huge difference
